I find that curious that Paul rarely quoted Jesus, why is that do you think? And is it exclusive to Paul? Now I am curious to know more.
I think I told you this before, but I heard a theory that Paul was actually the one who formed Christianity and Jesus was merely a mythical figure he chose at random to base the religion on. I'm not sure that I believe that, but now that you mention the above, this thought again crossed my mind.
