I just did a google search and here's how the "ruling planets" and the sunsigns presently line up:

Mercury -- Gemini and Virgo
Venus -- Taurus and Libra
Moon -- Cancer
Sun -- Leo
Mars -- Aries
Jupiter -- Saggitarius
Saturn -- Capricorn
Uranus -- Aquarius
Neptune -- Pisces
Pluto -- Scorpio

Mars ruled both Aries and Scorpio until Pluto was discovered, and Scorpio was moved to Pluto; Jupiter ruled Saggitarius and Pisces until Neptune was discovered and Pisces was moved to Neptune; Saturn ruled Capricorn and Aquarius until Uranus was discovered, then Aquarius was moved to Uranus.

Up until telescopes were invented, the ancient peoples could only see the five closest planets, Mercury, Venus, Mars, Jupiter and Saturn, so they crowded all the sunsigns onto those five with one on the sun and one on the moon. Since there are only two planets doubled up right now (Mercury and Venus) and since two new sub-planets have just been named, Ceres and Xena (planet 2003), you're probably right -- maybe we'll finally see some final shuffelling and one sign per planet.
