Greg, are you still workmates with this woman? If so, beware of putting anything in writing. It's good for your own sake to have expressed your feelings, but she doesn't need to necessarily read it, esp. if she sees some of your statements as an "attack" on her church (eg, saying they've been banned from campuses for recruiting techniques).
I'd advise you to have a heart to heart talk with her if you must, but not to give the letter. It's a great letter but, "cast not your pearls before...." Oh, forget it.
