One side of the equation is what you say that "In the world of psychology, it has been proven that we will seek the familiar." but there is more to it. Sometime we seek the unfamiliar. It happens when we are trying to escape from pain or what we perceive as threatening or painful.

Psychologically, the motivation behind our choices is always selfreward. This can happen by actively pursuing what we perceive as benefits, by actively fleeing from what we perceive as punishment and deprivation, or by some combination of both perceptions.
